I have to start this post by giving praise to my heavenly Father. My niece Cadence was baptized earlier today. I have prayed and prayed for Cadence since the day she was born. Just like I pray for my own children's salvation daily I lifted her up and about a year ago my prayers were answered when she accepted Jesus into her life. A few weeks ago she was talking about wanting to be baptized. We had discussed it before but nerves always got the best of her but today she made her proclamation and allegiance to Jesus and I couldn't be happier. A late Monday Menu

So I haven't posted a recipe in a few weeks and so I will start with that. Tonight we are having the sweet and sour chicken that I mentioned in a few posts below and sometimes when I make chinese food I make yum yum sauce for the rice. If you have never been to a japenese restaurant and tried the sauce it is amazeballs. Did I just say amazeballs? Gross...I hate it when people say that. Okay...so anyways my sister gave me this recipe a few years ago and it has been a staple in my house for a while. When I tell people I can make it they usually just roll their eyes at me but when they try it I usually give them that "yea, IN YO FACE"! look because they love it. Enough talking here's the recipe....tweak it to however you like because some like it a little sweeter some don't. This is a recipe that you can definitely change up. Here ya go!

1-1/4 cup	Hellmann's mayonnaise-Yes it has to be Hellmann's. And no lowfat, nonfat, reduced fat versions. The good ol' tried and true full fat version is what ya need!
1/4 cup	water
1 teaspoon	tomato paste
1 tablespoon	melted butter
1/2 teaspoon	garlic powder
1 1/2 teaspoon	sugar-use a little more...little less...taste as ya go!
1/4 teaspoon	paprika
	A dash of cayenne pepper-I use a little more about 1/2tsp because I like things spicy.  Okay here is what ya do. Whisk everything together and refigerate over night. Let me stress YOU HAVE TO LET IT REFIGERATE. It will not taste right if you don't. I usually keep it in a tupperware container in the fridge and it keeps for about a week. Let me know what ya think!

To Do's

I am feeling a little overwhelmed as the holiday season is approaching. My to do list is a mile long and my time frame to do it in seems like minutes. I am in charge of cooking the Turkey and desserts for this years Thanksgiving dinner with my family. I am cooking coconut cream pie (husbands favorite), apple pie, peanut butter pie and pecan. I am also going to make a banana pudding. With working 3 days prior to Thanksgiving I see a few late nights and early mornings in my future but totally worth it. I love this time of year. My sisters and I are pretty close usually we all pile up in a car (there are 4 of us) and go shopping. Love it!

I am going to go ahead and apologize now for my lack of posts recently. I have scored some amazing deals this week but haven't had the chance to share. We had big big changes this week. I finally have a job! This is something that we have been praying about for quite some time. Savings and BLACK FRIDAY ADS!

So I am a little torn about leaked Black Friday Ad's. A part of me loves that they are getting leaked earlier and earlier each year. It allows me to get my planning and budgeting in order. It just makes for a less chaotic experience. However, I love getting together with the family after dinner and sitting around and the excitement of opening that first ad in hand to see what the deals are. So I'm a little torn. I haven't looked at any ads yet even though as of now I think there are 19 ads leaked. I do wish stores would stay closed on Thanksgiving. I don't get a lot of time with my family and so I will be taking my time on getting to the stores.




Now onto some deals!!  I've been an avid couponer for years and saving money really is the norm for me but this deal is to exciting not to share. I walked out of Target on cloud 9! Here's what happened:
I bought two of the Boom Co. Guns at target. They are on sale for 10.82 on target.com.. (They were 14.99 in store) Boom Co. was also on Target Cartwheel for 50% off (cashier manually took 50%) off manually and then I got 25% off through a coupon in the store ad. Which makes my total 8.61!! But wait there's more!! I got out to my car and realized I had a shop kick reward...went back in showed them my shop kick reward and got 5 bucks back!! Making my total 3.61!!!

Let me tell you a little bit about the shopkick app if you don't already know. I heard about it two days ago. You get kick points which are redeemable for gift cards when you accumulate kick points. Monday Menu

So I was cooking dinner the other night and thought that the recipe I was using was to good not to share so thought I will put it up on the blog and see how it goes. This recipe is for sweet and sour chicken. I make it at least twice a month. Chinese food is my husbands favorite and I hate going out for chinese. I hated chinese food before I tried this recipe. Literally makes me sick. So this is our compromise. Homemade is always better right? RIGHT! Here's the recipe.

Ingredients

• 3-4 boneless, skinless chicken breasts
• Salt and pepper to taste
• 1½ cup cornstarch
• 3 eggs, beaten
• ¼ cup canola oil
• 1 cup granulated sugar
• 4 tablespoons ketchup
• ¼ cup white vinegar
• ¼ cup apple cider vinegar
• 1 tablespoon low sodium soy sauce
• 1 teaspoon garlic salt

Instructions

1. Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
2. In separate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch then coat in egg mixture.
3. Heat canola oil in a large skillet over medium-high heat and cook chicken until browned. Place the chicken in a 9 x 13 greased baking dish.
4. In a medium sized mixing bowl, combine sugar, ketchup, apple cider vinegar, white vinegar, soy sauce, and garlic salt. Pour over chicken and bake for 1 hour.
5. I stirred the chicken every 15 minutes so that it coated them in the sauce.

I'm Back!!

Wow! I can't believe it has really been 7 months since my last post! Where has the time gone?  Since my last post I have had baby Elias Job and he is 6 months today! To say that time has flown by would be an understatement. We have also moved into a home that we love. God provides when you trust and ask. With that move we have had issues getting internet at our house which explains my absence from blogging. I've missed it! Here are a few pictures of some highlights that have happened within the past 6 months.
